Nichole’s Fine Pastry, a James Beard Foundation nominee, is a local destination best known for its handcrafted pastries and cakes. To support continued growth, the team partnered with Great States Construction to expand its kitchen and make room for a broader menu.

The project included a full kitchen reconfiguration, new commercial equipment, a modern HVAC system, and a code-compliant hood system designed to accommodate a cooktop grill. Each element was built to improve workflow, ventilation, and long-term durability in a high-use environment.

Working within an older building comes with challenges. Even in a familiar space, existing conditions required a flexible approach to keep the project moving forward, with adjustments made in real time as the work progressed.
